My favorite dinners are the kind that can be prepped, cooked and ready within the span of 4 songs.
This busy Momma does not have time for concert length dinner recipes.
Can I get an amen.
That’s why skillet dinners and sheet pan dinners are two of my very favorites.
This recipes makes enough for a family with little kids, but I would double for older kids with bigger appetites!

Skillet Ham and Cauliflower Stir Fry
Equipment
- Skillet
Ingredients
- 20 oz frozen riced cauliflower stir fry
- 1 lb ham steak, cubed
- 2 tbsp vegetable oil
- 1/4 c soy sauce
- 2 tbsp maple syrup
- 1 tsp onion powder
- 1 tsp garlic powder
Instructions
- In a large skillet, mix the vegetable oil and frozen riced cauliflower stir fry and cook over medium/high heat for 5 minutes until veggies start to soften.
- Add the rest of the ingredients and cook for approximately 10-15 minutes or until the veggies and ham start to brown/crisp.
- Consider adding eggs to the stir fry for extra protein as desired! (optional)
Freezing Instructions
- Place all ingredients (except eggs.0) into a gallon freezer bag and lay flat in the freezer. Prior to cooking, break up the frozen piece into smaller pieces and place in skillet. Cook as directed. Add eggs during this step.
