Mediterranean Roasted Vegetables
With only three ingredients, this Mediterranean roasted vegetables recipe is an easy and quick addition to any dinner dish.
The key to getting more colors on your plate without the monotony and tedium of cutting a million vegetables for salads is to have an arsenal of easy and quick steamed or roasted vegetable recipes.
We are huge fans of sheet pan roasted vegetables and thankfully our kiddos seem to “tolerate” them as well.
We buy our mixed veggies in a bulk bag from Costco. The key to this is McCormick’s Mediterrean Spiced Sea Salt. My mom buys these and puts them in our Christmas stocking every year. The spice mixture is perfection, and makes for easy delicious meals.

Equipment
- 1 Sheet Pan
Ingredients
- 2 lbs mixed vegetables, frozen
- extra virgin olive oil
- Mediterranean Sea Salt spice mix
Instructions
- Spread 2 lbs of frozen mixed vegetables onto the sheet pan.
- Coat with extra virgin olive oil.
- Sprinkle with Mediteranean sea salt.
