I don’t know about your kids, but my kids’ relationship with vegetables is about as predictable as the weather.

Some nights it’s sunshine and rainbows and other nights it’s stormy and raining.

That being said, the vegetable recipes my kiddos embrace every time is my baked sweet potato fries recipe and roasted Brussels sprouts.

So I thought why not combine the two? Needless to say, this recipe gets polished of every time.

Equipment

  • Large Sheet Pan

Ingredients
  

  • 2 lbs brussel sprouts, frozen
  • 2 sweet potatoes, diced
  • 1/4 c olive oil
  • 1 tsp garlic powder add more as needed
  • 1 tsp onion powder add more as needed
  • 1 tsp salt add more as needed

Instructions
 

  • Lay the veggies on large sheet pan.
  • Drizzle with olive oil and sprinke with the seasonsings.
  • Bake at 475 F 30 mins until crispy on the outisde.

Freezing Instructions

  • Place all the ingredient in a gallon freezer bag and lay flat in the freezer. Bake according to the directions above.
