Slow Cooker Fajita Chicken Salad
This easy slow cooker fajita chicken salad can be made in a variety of ways including low-carb, dairy, and gluten-free!
We love all things tacos around here – taco salads, taco wraps, taco seasoning, baked enchiladas, burrito bowls. . . you get the picture. Because tacos are so versatile and can be enjoyed with nutrient-dense carbs or without any carbs, dairy free by eliminating the cheese or sour cream, gluten-free by using corn tortillas – tacos are a recipe regular in our house.
We typically make something taco related every Tuesday and either use this recipe or whip up ground turkey on the stove.
What makes this recipe fabulous is that the leftover fajita chicken an be used in lots of other recipes.
This slow cooker fajita chicken recipe can be customized in endless ways and toppings for this salad can include:

Slow Cooker Fajita Chicken Salad
Equipment
- Slow Cooker
Ingredients
- 6 chicken breasts
- 1 pepper, diced
- 1 onion, diced
- 28 oz can diced tomatoes, drained
- 1 tsp garlic powder
- 3 tbsp taco seasoning
Instructions
- Place the chicken in the bottom of a slow cooker.
- Place the diced veggies on top of the chicken.
- Mix the diced tomatoes, garlic powder, and taco seasoning.
- Pour over the chicken and veggies.
- Cook on high for 2-3 hrs or low for 4-6 hrs.
Freezing Instructions
- Place all the ingredients in a slow cooker freezer bag and freeze flat. Thaw overnight in the fridge prior to cooking. Cook acoording to the directions above.
