Cheesy Mashed Potatoes – Slow Cooker
Do you cook most of the holiday meals in your home? At this point, we are still blessed to have a lot of our grandparents living, so we contribute side dishes and desserts like this cheesy mashed potatoes slow cooker recipe every year for Easter.
I have had this recipe in my “stash” for many years, and it will not surprise you that my secret ingredient is Greek yogurt.
The Greek yogurt adds a delicious creaminess to the final product, and of course, who can go wrong with any recipe that involves bricks of sharp cheddar cheese?ย
I don’t make this recipe often, but every year I end up making it for Easter dinner at one of the 5 family gatherings over the course of the weekend.ย It’s the perfect stress-free side dish thanks to the slow cooker, and it tastes amazing with sweet glazed ham.
A tip when you are making this recipe – if you don’t like the “bits” that come with the potato skins you can peel the potatoes first for a creamier dish.

Cheesy Mashed Potatoes - Slow Cooker
Equipment
- 1 Slow Cooker
Ingredients
- 5 lbs Russet potatoes
- 1 onion diced
- 2 tsp salt
- 1 tsp pepper
- 4 cloves garlic minced
- 1 stick butter
- 2 ยฝ c water
- 1 ยฝ c sharp white cheddar shredded
- 3 vegetable bouillon cubes
- 8 oz plain Greek yogurt or sour cream
- 8 oz cream cheese
- Chives for garnish
Instructions
- Peel and cube the potatoes (or leave the skins on if you like)
- Place in a 6 qt slow cooker and add the water, garlic, diced onion, and bouillon cubes. Cook on Low for 6ย hours.
- After done cooking, use a mixer and blend potatoes with salt, pepper, butter, cheese, greek yogurt and cream cheese untilย smooth.
- Garnish with chives as desired
