One of the most frequently asked questions I receive from my FASTer Way to Fat Loss clients is “what do you routinely eat for lunch?”
This is a valid question because as a busy mom lunch is one of the most challenging meals of the day.
If you stay at home with kids, then this meal more often than not involves handfuls of food shoveled into your mouth while trying to keep hangry children from experiencing an apocalyptic psychotic breakdown.
Maybe that is just my kids.
If you are a working professional, then lunch is a quickly compiled assortment of leftover containers you find in the fridge of which the contents may or may not be suitable for consumption.
The point is that a highly nutritious yet delicious lunch menu needs to be comprised of easy on the go recipes that anyone can make.
This low carb tuna salad sandwich recipe is one of my go to lunch creations and can be customized in many ways.

Low Carb Tuna Salad Sandwich Recipe
Ingredients
- 4 6 oz can tuna, drained
- 3/4 c mayonaisse
- 1 tbsp apple cider vinegar
- 1 tbsp sugar
- 1 bunch romain lettuce leaves
- garlic powder
- onion powder
- tomatoes, peppers, avocado, cheese (optional)
Instructions
- Mix the tuna, mayo, apple cider vinegar, and sugar in a bowl.
- Spread 1/4 c of the tuna salad onto a romaine lettuce leaf to create a low carb tuna salad sandwich.
- Dust with onion and glarlic powder for added flavor.
- Garnish with tomoatoes, peppers, avocado, or cheese as desired.
