Sweet and Salty Easy Egg on Toast Recipe
I love breakfast food. Eggs, pancakes, french toast, casseroles . . . you name it. I’m in.
I love discovering new breakfast food combos that are delicious and nutritious.
For the last 20+ years, my dad’s side of the family has spent Thanksgiving weekend together at our family cabin, and over a decade ago I was first introduced to the most surprisingly delicious breakfast combo.
For years one of the homemade breakfasts my aunt would routinely make that weekend was a spread of eggs, bacon, and English muffins.
For years I watched my cousins spread strawberry jelly on their English muffin and then top it with the scrambled eggs.
I simply accepted that they were strange children, but then one year I guess I decided to put my big girl pants on and give it a try.
Envision me biting into this sandwich in slow motion and then watch all the heart emojis pop out of my eyes. It was a culinary revelation.
Fast forward years later and with a few nutrient dense additions this is one of our go-to meals.
For dairy free leave off the cheese and for gluten free use any piece of GF bread. It tastes delicious in every scenario. So put on your big girl pants [or boy pants], give this combo a try, and let the heart emojis fly.
Bon appetit!
