In a large skillet, mix the vegetable oil and frozen riced cauliflower stir fry and cook over medium/high heat for 5 minutes until veggies start to soften.
Add the rest of the ingredients and cook for approximately 10-15 minutes or until the veggies and ham start to brown/crisp.
Consider adding eggs to the stir fry for extra protein as desired! (optional)
Freezing Instructions
Place all ingredients (except eggs.0) into a gallon freezer bag and lay flat in the freezer. Prior to cooking, break up the frozen piece into smaller pieces and place in skillet. Cook as directed. Add eggs during this step.
