The fresh flavor of pesto with a creamy tuna mix makes these cheddar tuna melts a deliciously easy one-dish dinner every time.
As a kid, I always loved when my mom would put cheddar slices on Ritz crackers in the toaster. I also loved my mom’s tuna salad recipe. Lastly, I absolutely love, love, love pesto. The fresh burst of basil makes my mouth happy every time.
This cheddar tuna melts recipe is a delightful marriage of all three loves; the perfect quick dinner that can be prepped and made within 20 minutes or frozen for later.

Tuna Melts
Equipment
- 1 extra large sheetpan
Ingredients
- 8 slices bread
- 1/2 c pesto optional
- 2 cans tuna
- 3/4 c light mayonaise
- 2 tbsp sugar
- 4 slices sharp cheddar
Instructions
- Place 8 slices of bread on a greased extra large cookie sheet.
- Spread approx 1 tablespoon of pesto onto each slide of bread.
- Mix together the tuna, mayo and sugar. Spread approx 2 heaping spoonfuls of the mixture onto each bread slice.
- Top each melt with 1/2 slice of cheddar cheese.
- Broil in the oven on high for 2-3 minutes until cheese is browned and bubbling.
