Creamy Tuna Pesto Flatbread
This tuna pesto flatbread is low-carb comfort food, made with creamy tuna, bold pesto, and a crunchy cauliflower crust.

Our family has enjoyed this recipe many times, and I actually enjoy it MORE than my cheddar tuna melts on traditional bread.
For those of you not intolerant to lactose, add a couple of slices of cheddar cheese on top and broil for 2 minutes prior to serving.

Creamy Tuna Pesto Flatbread
Ingredients
Flatbread
- 1 cauliflower pizza crust
Pesto (courtesy of www.ThrivingHome.com) – Will need 2T or 2 cubes for this recipe.
- 2/3 c olive oil
- 2 c fresh basil
- 2 garlic cloves
- 1/2 c Parmesan cheese, grated (eliminate for DF)
Creamy Tuna Mix
- 1/3 c mayonnaise
- 2 cans of tuna, drained
- 1 T sugar
- 1 T apple cider vinegar
- 6 slices sharp cheddar cheese
Instructions
- Bake the cauliflower crust in the oven according to the box directions.
- Mix the creamy tuna ingredients together in a bowl. Set aside.
- Blend the pesto ingredients in a food processor and pour into a ice cube tray.
- Freeze and then bag the individual cubes and store in the freezer. 1 cube = 2 T.
- Spread 2 cubes or 4T pesto onto the baked cauliflower crust.
- Spread the tuna mix over the pesto.
- Add slices of sharp cheddar cheese on top and broil in the oven for 2 minutes
- Slice and enjoy.
