Soy Maple Pork Tenderloin & Vegetables
With only a handful of ingredients, make dinner simple with this one-dish soy maple pork tenderloin and roasted vegetable recipe.
Every year at the beginning of every summer break, I am reminded that I have growing kids as the food seems to disappear from the house at an alarming rate. One child, in particular, is currently eating me out of house and home.
Caleb, despite his measly 8 years of age, eats two servings of instant oatmeal, a banana, and half a protein shake before his sisters even get out of bed.
I cannot fathom my grocery bill when I have two teenage boys. I have had to adjust my dinner portions so that I have leftovers that are high in protein the next day, and this soy maple pork tenderloin dinner recipe is a delicious one-dish meal that packs a lean protein punch and is easily made in bulk.
I buy the pork tenderloins from Costco and bake two of them in one oversized glass baking dish with the veggies. So easy and thankfully a winner with the above-mentioned child destroying my food budget.

Soy Maple Pork Tenderloin & Vegetables
Equipment
- 1 extra large glass baking dish larger than 9x13 if possible
Ingredients
- 2 lbs pork tenderloin
- 1 lb bag mini carrots
- 1 lb frozen cauliflower or broccoli
- 1/2 c olive oil
- 1/3 c soy sauce
- 1/3 c maple syrup
- 1 tbsp onion powder
- 1 tsp garlic powder
Instructions
- Place the pork tenderloin in a greased glass baking dish. Spread the vegetables around the tenderloin.
- In a small bowl, mix together the olive oil, soy sauce, maple syrup, onion powder, and garlic powder.
- Pour the sauce over the tenderloin and veggies and stir, thoroughly coating. Be sure to turn the pork tenderloin a couple of times to make sure it is coated.
- Roast at 400F for 45 mins. Let juices settle and cut each tenderloin into approx 14 1" slices.
