Easy Oven Omelet

Prep ahead, freeze for later, and savor a wholesome one-pan meal anytime with this easy, customizable low-carb oven omelet recipe.

I don’t know about your kids, but my kids’ taste palette changes on the regular, requiring a degree of flexibility and creativity as the household chef.

This is one of the reasons I created the “have it your way” oven omelet recipe, because one of my favorite things about egg casseroles is how easy they are to customize within one dish.

For example, in my slow cooker egg casserole recipe, I always load one half with veggies and the other half without for my kiddos.

The same thing can be done with this low-carb oven omelet recipe. In fact, when I photographed this dish I was going to put chicken sausage on both sides and my daughter informed me she no longer likes the chicken sausage.

So . . . one side has just cheese while the other side is loaded with chicken sausage, peppers, onions, and cheese.

Another tip for this dish is that if you have leftover taco ingredients, we will also make half of it a Mexican omelet, which includes leftover taco meat, sauteed onions, and peppers. It is DELICIOUS and the macronutrient profile is almost identical to this recipe with chicken sausages.

This dish is naturally gluten free and low carb, but to keep it dairy free simply hold the cheese. Enjoy this one dish “have it your way” oven omelet for breakfast, lunch, or dinner.

“Have It Your Way” Oven Omelette

Ingredients
  

  • 15 eggs
  • 1/4 c honey mustard
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 c sharp cheddar, shredded
  • 1 lb chicken breakfast sausage
  • onion, pepper, tomatoes (optional)

Instructions
 

  • Beat the eggs together and add the honey mustard, salt, garlic powder and onion powder. Mix in the diced chicken breakfast sausage and 1 c of cheese (leave out the cheese if dairy free).
  • Pour into a greased 9×13 dish.
  • Add fixins as desired to each side of the dish. Ideas include a diced pepper, diced onion, diced tomatoes . . .
  • Sprinkle the remaining 1 c of shredded cheese on top.
  • Bake at 400F for 30 mins.

Freezing Instructions

  • Prepare as directed in a freezer safe baking dish and seal. Thaw overnight in the fridge prior to baking. Bake as directed above.
