At the beginning of this school year I made a deal with my kids – if they completed their assigned morning routine tasks before school I would make them breakfast each morning. I wanted my kids to get in the habit of showering in the morning and practice getting ready for the day instead of the chaos that typically involved me throwing a id into the shower after yelling at them to get out of bed for the 5th time.

Amazingly, it worked. For the older two, at least. It only took a couple of weeks for Gracie and Caleb to own their little morning routine and although it still takes Caleb 15 minutes to find a pair of shoes that match our mornings have definitely improved.

This 20 minute oven pancake bars recipe is one of those promised homemade breakfasts. I make them Wednesday and then serve the second half of the pan for breakfast Thursday morning unless they get finished up after school first.

This recipe has been a year in the making because I am super picky about my pancakes. They need to be fluffy without being dry, not too sweet they taste like a dessert but not so bland they require a deluge of maple syrup.

I am happy to say these oven pancake bars are very nearly perfection, and the awesome bonus is that they boast 3 scoops of protein powder for added nutrient density and satiety for your kids.

As always my favorite protein power of all kind is Orgain’s Clean Whey. For an added boost of chocolatey flavor you can substitute the vanilla protein powder for chocolate to make chocolate chocolate chip pancake bars (also a favorite of my kids).

When adding toppings to this recipe be sure to sprinkle them on after you pour the batter into the sheet pan otherwise they all settle and tend to stick to the bottom even when the pan is sprayed. Toppings we like are strawberries (great in chocolate and vanilla pancake bars), chocolate chips, peaches and cinnamon, blueberries, and just cinnamon.

Equipment

  • 1 regular size sheet pan

Ingredients
  

  • 1 c flour
  • 1 c quick oats
  • 1/4 c sugar
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 3 scoops vanilla protein powder recommend Orgain Whey
  • 1 tsp cinnamon
  • 2 tbsp lemon juice
  • 1 3/4 c 1% milk
  • 1 c nonfat plain Greek yogurt
  • 1 stick butter, melted
  • 1/2 c chocolate chips
  • strawberries, peaches, blueberries, cinnamon, etc as desired

Instructions
 

  • Mix all the ingredients together except the toppings (including the chocolate chips) and the butter.
  • Melt the butter in a dish and pour into the regular size sheet pan.
  • Pour the batter into the pan over the butter.
  • Sprinkle the chocolate chips or chopped fruit of choice onto the batter.
  • Bake at 400F for approx 20 mins.
  • Serve plain or with maple syrup. Freeze leftovers and reheat as desired.
