Easy Oven Pancake Recipe (Pannu Kakku)

During Christmas and summer breaks in college, my high school girlfriends and I would rotate houses and meet up for brunch.

I got this recipe about 15 years ago from Heather’s mom after one of our brunches.

Heather’s family is Finnish, and ever since they passed along this recipe I have been making it for the last decade and a half.

A couple of things I have learned making this recipe.

First of all, there is no good substitution for flour, although I do often use white whole wheat.

If you come up with a good gluten-free substitution please let me know.

Second, be sure to pour the mixture in the middle of the 9×13 dish in order to evenly spread the melted butter.

Top this dish with syrup, powdered sugar, and fruit for a sweet breakfast dish.

Ingredients
  

  • 1/4 c butter, melted
  • 4 eggs
  • 2 c 1% milk
  • 1/2 c sugar
  • 1 tsp salt
  • 2 c flour

Instructions
 

  • Melt the butter, and pour into the bottom of a glass 9x13 pan.
  • Mix the remaining ingredients really well.
  • Pour the mix into the center of the 9x13 dish so the butter is evenly distributed around the edge (this is what creates the delicious crispy edge).
  • Bake at 450F for 20 mins. Turn the heat own to 350F and bake for another 5 mnutes or until the edges ar crispy and browned.
  • Top with syrup, powdered, sugar, berries, peaches or fruit of your choice.201

  1. Looks yummy! I do wonder if I could use almond flour for this recipe. I love things I can make ahead and then not cook all week!

    1. I did make it with almond flour once. My kids liked it. I didnโ€™t. But I also am not a huge fan of the almond flour texture. But my kids liked it! If you try almond flour please let me know what you think!

  2. I would think this would adapt nicely to oat flour with ground nuts added. I think I will try that. Um, your popup ads are paralyzing your site, though. Makes it really hard to load content…as that loads last. Sandi

  3. I get upset when people say it sounds delicious & want to make it. BUT, it is usually followed by ways to change it๐Ÿ˜ข๐Ÿ˜ข. Make the recipe the way it is written!
