Banana Chocolate Muffins Recipe

For those of you who have been around here for any length of time, you know I love sneaking nutrient-dense ingredients into my recipes so that they pack a punch without sacrificing flavor.

A few of my favorite additions include Greek yogurt in most baked goods (adds a punch of protein), ground flax in baked goods and casseroles (all kinds of fabulous omega 3s), and hemp hearts in eggs and casseroles (more omega 3s),

Muffins are one of my favorite nutrient-dense snacks because they can be made in bulk and then frozen for later to enjoy for a quick morning breakfast, an after-school snack, or a last-minute get-together.

Other yummy muffins recipes include my Peach Oatmeal Muffins, Pumpkin Cheesecake MuffinsPumpkin Streusel Muffins, and Zucchini Carrot Cake Muffins!

To make extra-large muffins, like the pumpkin cheesecake muffins, I use these tins.

      Ingredients
        

      • 3 bananas mashed
      • 1 c plain nonfat Greek yogurt
      • 2 eggs
      • 1/3 c honey
      • 5 T butter, melted
      • 1 tsp vanilla
      • 1 ยฝ c white whole wheat flour
      • ยผ c ground flax seed
      • 1/3 c sugar
      • ยผ c cocoa
      • 1 tsp baking soda
      • ยฝ tsp salt
      • ยฝ tsp cinnamon

      Instructions
       

      • Mix together all the ingredients.
      • Pour into greased or lined muffin tins.
      • Bake at 350F for 15 minutes. Cool.

      Freezing Instructions

      • Bake as directed. Allow to cool completely. Place in freezer gallon bag and freeze. Pop one muffin in microwave for approx 20 secs toย reheat prior to serving.ย
