We are always looking for yummy recipes that aren’t heavy with carbs, and one of the simplest ingredient substitutions is cauliflower for potatoes. Potatoes, although all-natural, are very carb dense without a significant amount of fiber. So quite a few years ago now I substituted riced cauliflower in place of tater tots to create a delicious low-carb tater tot casserole.

With a couple of spices added here and there, this recipe is full of flavor and nutrient density.  

The easiest way to make riced cauliflower is to buy frozen packages so that all you have to do is stick them in the microwave. 

This keto tater tot recipe can be made with ground beef or ground turkey. Due to my family’s genetic risk factors of high cholesterol and heart disease, we always use ground turkey at home, but this recipe is good regardless of whether or not you use beef or turkey!

      Keto Tater Tot Casserole

      Total Time 50 minutes
      Servings 12 Servings
      Calories 286 kcal

      Ingredients
        

      • 2 lbs ground beef (or turkey)
      • 1 onion, diced
      • 4 garlic cloves, minced
      • 2 cans condensed cream of mushroom soup
      • 4 c riced cauliflower
      • 4 c cheddar cheese, shredded
      • 2 tbsp chives (optional)
      • salt & pepper

      Instructions
       

      • Saute the onions in a large skillet. Add the garlic and the beef and brown.
      • Add salt and pepper to the beef and stir in the cream of mushroom.
      • Place in the bottom of a greased 9x13 pan.
      • Cook the riced cauliflower.
      • Mix the cauliflower with 2 cups of shredded cheddar and 2 tbsp chives.
      • Spread on top of the beef. Top with the remaining cheddar cheese
      • Bake at 350F for 40 minutes or until cheese is browned.

      Freezing Instructions

      • Add all ingredients to a freezer-safe 9x13. Seal with plastic wrap and tin foil and place in the freezer. Thaw overnight. Bake as directed above.

      1. So good! It was nice to have everything for this meal in the freezer so we could make it on a day when I didn’t have a plan!
