(We are team triangles).
But there seem to be 3 kinds of icing people.
The traditional heavy and sugary kind, the light and airy kind, or the no icing at all kind.
Label me “light and airy”, but I love a creamy whipped icing that is smooth and light.
Icing is so make-or-break for me that I chose my wedding cake entirely based on the quality of the icing. #truestory
Next month will be our 10 year wedding anniversary!
Our picture-perfect cake-cutting moment went downhill quickly.
For those of you local, we got our cake and cupcakes from Oregon Dairy and chose their whipped icing option. They were delicious.
I digress.

Creamy Whipped Chocolate Icing
Ingredients
- 8 oz light cream cheese
- 1 stick butter, softened
- 1 1/4 c powdered sugar
- 1/3 c nonfat plain Greek yogurt
- 1 tsp vanilla
- 2/3 c cocoa powder
Instructions
- Combine all the ingredients and whip together in a mixer on high speed.
- Can be frigerated or deep frozen until needed.
