1 extra large glass baking dish larger than 9x13 if possible
Ingredients
2lbspork tenderloin
1lbbag mini carrots
1lbfrozen cauliflower or broccoli
1/2colive oil
1/3csoy sauce
1/3cmaple syrup
1tbsponion powder
1tspgarlic powder
Instructions
Place the pork tenderloin in a greased glass baking dish. Spread the vegetables around the tenderloin.
In a small bowl, mix together the olive oil, soy sauce, maple syrup, onion powder, and garlic powder.
Pour the sauce over the tenderloin and veggies and stir, thoroughly coating. Be sure to turn the pork tenderloin a couple of times to make sure it is coated.
Roast at 400F for 45 mins. Let juices settle and cut each tenderloin into approx 14 1" slices.
