It seems like squash is one of those foods that people either love or hate.

It also tends to be one of those homegrown vegetables that people end up with too much of.

So . . . if you like sauteed squash and have an abundance of this particular vegetable, then this is the perfect dish for you.

It is low carb, gluten-free, and high in protein.

If you don’t like Gruyere, then consider a sharp cheddar cheese.

Cheese And Ham Squash Casserole

This low-carb, gluten-free Cheese And Ham Squash Casserole recipe is a burst of nutritious flavor and melt-in-your-mouth delicious!

Ingredients
  

  • 2 tbsp butter
  • 1 onion, diced
  • 1 tsp salt
  • 1 tsp garlic powder
  • 4 yellow squash, shredded
  • 1 lb 16oz (2 c) ham, diced into bite sized pieces
  • 4 eggs
  • 1 lb 16oz (4 c) aged Guyere cheese, shredded
  • 1/3 c 1% milk
  • 1/4 c plain nonfat greek yogurt

Instructions
 

  • Melt the butter in a large saucepan. Saute onion until soft.
  • Add shredded squash. Saute until tender (approx 5 minutes).
  • Pour into a strainer over the sink and press to drain. Allow to continue draining.
  • In a large bowl whisk together the eggs, milk, yogurt, salt, garlic powder, ham, and 2 c cheese.
  • Add the squash and mix.
  • Pour into a greased 9x13 baking dish. Sprinkle the remaining 2 c shredded cheese on top.
  • Bake at 350f for 35 minutes or until the cheese is brown and bubbling.

Freezing Instructions

  • Prepare as directed and freeze in a sealed, freezer-safe baking dish. Thaw overnight and cook according to directions.
