16oz (2 c) ham, diced into bite sized pieces

eggs

16oz (4 c) aged Guyere cheese, shredded

1% milk
1/4
c
plain nonfat greek yogurt
Instructions
Melt the butter in a large saucepan. Saute onion until soft.
Add shredded squash. Saute until tender (approx 5 minutes).
Pour into a strainer over the sink and press to drain. Allow to continue draining.
In a large bowl whisk together the eggs, milk, yogurt, salt, garlic powder, ham, and 2 c cheese.
Add the squash and mix.
Pour into a greased 9x13 baking dish. Sprinkle the remaining 2 c shredded cheese on top.
Bake at 350F for 35 minutes or until the cheese is brown and bubbling.
Freezing Instructions
Prepare as directed and freeze in a sealed, freezer-safe baking dish. Thaw overnight and cook according to directions.
