Fresh and flavorful, this low-carb tuna stuffed peppers recipe is loaded with protein and makes for an easy snack or lunch idea.

What should I eat for lunch?
A midday dilemma every mom faces with dreadful predictability.
It needs to be quick, easy, and preferably nutritious.
And although my kids’ instant oatmeal is always a reliable fallback, I have several nutritious and delicious lunch recipes that I enjoy most every day.
If we have leftover tuna salad, then this low-carb tuna salad pepper boat is my go-to lunch.
Low carb and loaded with protein.
Another great tip for easy, portion-controlled lunches includes mini-sized guacamole packs and mini-sized hummus packs as well.

Tuna Stuffed Peppers
Ingredients
- 1 red pepper, halved
- 2 oz guacamole (mini cup)
- 1/2 c tuna mix
Instructions
- Cut the pepper in half.
- Remove the top and seeds.
- Stuff each half with 1/4c of tuna mix.
- Spread the guacamole on top of the pepper halves.
