A couple of weeks ago I asked for chicken recipe suggestions on my Facebook page because my kids told me they were sick of what I was making. #momlifebelike

Wow did you all show up. I have been slowly going through the recipes and honing in on the ones my family likes to make nutritious, delicious, and simple.

When making the chicken you can add salt and pepper as desired and keep in mind that if you use organic cream of chicken soup it will be less salty. Also, a dinner prep hack is to buy the broccoli florets frozen in a microwaveable bag. I buy mine in bulk from Costco. I pop the bag into the microwave to steam the broccoli and then chop the broccoli after it is steamed so the pieces aren’t quite so large. The second tip is that this recipe is a perfect way to use any chicken leftovers.

Ingredients
  

  • 4 chicken breasts, cubed and cooked
  • 1 lb broccoli florets, chopped
  • (2) 10 oz cans cream of chicken
  • 1 tsp garlic
  • 1/2 c plain Greek yogurt, nonfat
  • 8 oz sharp cheddar cheese, shredded (2 cups)

Instructions
 

  • Cube 4 chicken breasts and cook on stovetop adding salt and pepper as desired. Place on the bottom of a greased 9×13 glass baking dish.
  • Steam 1 lb of broccoli. Chop and spread on top of the cubed, cooked chicken.
  • Mix together the 2 cans of cream of chicken soup with 1/2 c yogurt and garlic and spread over the chicken and broccoli.
  • Spread the 2 cups of shredded cheddar on top.
  • Bake at 450F for 15 mins until cheese is brown and bubbling on the top.
