Mint Oreo Ice Cream Cake Homemade
Need a SUPER EASY sweet treat? With only a couple of ingredients, this mint oreo ice cream cake is homemade and absolutely delicious.

It is one of my favorite things in life to create recipes that are not only easy and quick but also delicious.
This original homemade ice cream cake recipe came from a friend at work, and then I embellished it with Oreos and fresh strawberries. It instantly became a family favorite and is the number request of my kids for their birthdays.
Then I got the idea to add one of my favorite flavors – mint. There are a couple of ways I tried this. I bought the thin mint oreo cookies, and although it did taste delicious, it did not have the same aesthetic appeal to have the green scattered throughout the cake.
There also aren’t any all-natural mint Oreo cookies on the market. So I created this recipe that uses mint flavoring in the whipped topping. A key to this recipe is high-quality mint flavoring. The difference between organic mint flavoring and the fake stuff is astonishing.
The other thing to take not of is the way the ice cream sandwiches are layered. This is the best way to get as many sandwiches in the 9×13 as possible.

Mint Oreo Ice Cream Cake
Ingredients
- 24 ice cream sandwiches
- (2) 8 oz tubs of whipped topping, lite
- 30 chocolate oreos (2 sleeves)
- 2 tsp mint extract
Instructions
- Crush all of the Oreos in a bowl and set aside.
- Layer a glass 9x13 dish with approx 12 ice cream sandwiches.
- Mix 1 tsp mint extract with 1 tub whipped topping, then add half of the crushed Oreos and mix.
- Spread this mixture over the first layer of ice cream sandwiches.
- Layer with another 12 ice ceam sandwiches.
- Mix 1 tsp mint extract with the second tub of whipped topping. Spread over the ice cream sandwich layer.
- Finish by garnishing the top with the rest of the crushed Oreos.
- Freeze for approximately 1 hour prior to serving. Enjoy!
