Not only has Costco mastered the art of making me buy what I didn’t need in the first place, but they have also mastered the pumpkin pie which is nothing short of a Thanksgiving legend and has resulted in shopper aggression on more than one occasion.

What makes this 3.5 lb treat worth fighting for? Well, it is creamy, smooth, and melts in your mouth.

Its deliciousness has ruined my ability to fully enjoy the lesser versions. So what is the secret?

Heavy cream, for one thing.  (I mean really what doesn’t taste better with more fat?)And egg yolks for that richer texture.

When I did some research I found several blogs with copycat recipes, but Savor the Best had the most thorough explanation of what made Costco’s pumpkin pie stand out above the rest.  With some slight process changes on my end, the original recipe needs to be credited to her.

      Costco's Pumpkin Pie Recipe

      Cook Time 50 minutes
      Total Time 1 hour
      Course Dessert

      Calories 282 kcal

      Ingredients
        

      • 1 store bought pie Crust
      • 2 tsp vanilla
      • 1 egg
      • 3 egg yolks
      • ½ c 1 % milk
      • 16 oz can 100% Pumpkin puree
      • ¼ c sugar
      • 1 c heavy cream
      • ½ tsp salt
      • 1 1/2 tsp cinnamon
      • 1/2 tsp cloves
      • 1/4 tsp ginger
      • 1/4 tsp nutmeg

      Instructions
       

      • Mix all the pie ingredients together.
      • Pour into the pie plate.  Stop pouring when the filling is slightly below the crust as the filling will rise.
      • Bake at 325F for 1 hr.  Allow to cool for 2 hours.  
      • Refrigerate.  This will help it to set as well.  Warm prior to serving.  Serve with whipped cream or ice cream!

      Freezing Instructions

      • After cooled wrap tightly with plastic wrap and then aluminum foil. Allow to thaw overnight prior to serving.

      1. Costco really has mastered the pumpkin pie or at least the filling. They need a little improvement with the crust 🙂 It is so easy to buy those monster sized pies but sometimes you just gotta have the satisfaction of baking it yourself. Thanks for the credit

      3. Didn’t like the taste at all but I’ve never made pumpkin pie either. No hate to the original creator maybe I messed up the recipe, but all I know is that I don’t liked how it turned out.
