Balsamic Chicken Caprese Stack
This balsamic chicken caprese stack recipe is a delightful twist on the traditional caprese salad, making a beautiful presentation for any occasion.

When we first built our raised garden beds, one of the things I was most excited about was planting a Caprese garden.
A 4×8 garden bed planted with basil and the other half planted with beefsteak tomatoes.
If only mozzarella could be planted and grown with such ease.
I got the idea for this recipe last summer when my girlfriends and I were on a spa getaway.
The restaurant at the hotel stacked the sliced tomatoes, mozzarella, and basil into a beautiful display.
I decided to recreate the plate with the addition of chicken.
Enjoy this delightful recreation of the classic Caprese salad.

Balsamic Chicken Caprese Stack
Ingredients
- 2 chicken breasts
- garlic powder
- onion powder
- salt
- 8 oz fresh mozerella, sliced
- 2 lg beef steak tomatoes
- 1 oz fresh basil leaves
- 1/2 c balsamic vinaigrette
Instructions
- Place 2 chicken breats in an 8×8 baking dish. Drizzle both sides lightly with olive oil and sprinkle with garlic poweder, onion powder, and salt.
- Bake at 425F for 20 mins then broil for 3 mins.
- Slice the tomatoes and the mozerella.
- Slice the cooked chicken breast lengthwise in half and then cut the chicken breast down the middle to create 4 thik slices of chicken.
- Place the chicken on a plate, then layer the tomato, mozerlla and fresh basil. Repeat once more to finish stack. Drizzle 2 tbsp balsamic vinaigrette over the top.
