Healthy Weekly Meal Plan #24
Happy meal plan Monday! Today is the official start of our family’s first summer vacation with family in Tennessee.
Every year we spend a week in the south at my Aunt Cindy and Uncle Joe’s home in Tennessee.
We stay in the guest house with my parents and my sister, and then my Aunt Kristine, my brother, and my sister in law come up from Asheville, NC to stay as well.

As always it is a super fun family affair.
If we aren’t lounging by the pool, then we are playing games, eating food, and laughing all week long.
If Caleb goes missing, then we know where to look for him – with the pinball machines. I think he would sleep in this room if he could.
Look how much shorter his hair was last year!
This pic makes me laugh because he is totally in the back seat driving Gracie’s pinball game. Haha.
This week on IG you can expect a lot of poolside stories and fun in the sun.
Even though I get to take a week off from meal planning [insert my hearty “hallelujah” here] I put together a healthy dinner meal plan for you.
This week’s healthy dinner plan includes:
- Sheet Pan Fajita Salmon and Green Beans
- Cauliflower Tater Tot Casserole
- Broccoli, Chicken, & Cheddar Quinoa Casserole
- Sweet and Salty Egg on Toast
- Honeyed Ham Flatbread
MY COOKING PHILOSOPHY IS TO KEEP IT “HEALTHY AND EASY.”
RECIPES AT HAMMERS N HUGS WILL INCLUDE ALL-NATURAL INGREDIENTS THAT CAN OFTEN BE FROZEN AND HAVE BEEN TESTED AND APPROVED BY FRIENDS AND FAMILY.
