Let me introduce you to one of my very favorite desserts of all time.
Some girls are the cake types, but I am the pudding type.
I love desserts like creamy lemon pie, pretzel yogurt delight, no-bake cream cheese pie, and my easy key lime pie recipe.
This recipe is a delicious spin-off of my easy key lime pie!
For a fun twist, consider freezing the bars to create a frozen treat.
Another trick to freezing the bars is that it works really well if you want to take a dessert to a get-together, but the dessert may sit for some time before being served.
Freeze the bars, and then let them thaw for several hours until ready to serve.
I did this just the other day when we were going to a friend’s house for dinner, but we stopped to go miniature golfing first.
I packed the dish in a carry bag with some ice packs, and the bars were thawed and still cool several hours later when we arrived for dinner.

Easy No Bake Key Lime Cheesecake Bars
Ingredients
- 14 sheets graham crackers (1 1/2 sleeves)
- 1 stick butter
- 1/2 c sugar
- 1 8 oz tub lite whipped topping
- 2 14 oz cans sweetened condensed milk
- 2 8 oz pkgs lite cream cheese (room temperature)
- 1 c lime juice
- lime wedges (optional)
- whipped cream (optional)
Instructions
- Melt the butter in a glass dish and crush in the graham crackers and the sugar.
- Press into a greased 9x13 glass baking dish.
- Bake at 375F for 7 mins.
- Allow to cool completely.
- Mix the condensed milk, whipped topping and cream cheese together until smooth.
- Add teh lime juice and mix thoroughly.
- Pour on top of the graham cracker crust and refrigerate. Serve with lime wedges and whipped cream on top as desired.
Freezing Instructions
- Place the finished dessert in the freezer to serve as a frozen desert if desired.
