Easy Vegetable Beef Stew
Bursting with flavor and vegetables, this easy vegetable beef stew recipe is a kiddo favorite thanks to the magic ingredient at the end!

Easy Vegetable Beef Stew Recipe
The key to this recipe is to make it with the leftover beef from my Slow Cooker Tomato Beef Steak recipe.
This two-for-one recipe combo was a hand me down from my mother, and I have been making it for years.
Amazingly all three of my kids love this stew, and I am convinced it is due to the magic ingredient at the end.
If you have clicked on the recipe, then you have discovered the secret – ketchup! It adds the perfect burst of flavor to a pot full of vegetables.
What I love about this meal is that if you don’t have the exact amounts as suggested in the recipe, it doesn’t matter.
Sometimes I have more beef steak left over than other times. Sometimes I add green beans because I don’t have any broccoli on hand. Frozen corn is also a great addition but be careful if keeping it low carb.
You can pretty much add WHATEVER veggies you want to this pot. Season with the ketchup at the end and consider serving it with my Honey Oat Bread recipe for an easy and delicious dinner!

Easy Vegetable Beef Stew Recipe

Recipes at Hammers N Hugs will include all-natural ingredients that can often be frozen and have been tested and approved by friends and family!
These are the leftovers from our Slow Cooker Tomato Beef Steak a couple nights before. I threw in all the frozen vegetables with the leftovers in a large kettle with the beef broth and let simmer for 1 hour. So easy!!

Easy Vegetable Beef Stew
Equipment
- Kettle
Ingredients
- Leftover slow cooker tomato beef steak (approx ? recipe)
- 8 c beef broth
- 1 c ketchup
- 3 tbsp Worcestershire sauce
- 1 lb frozen broccoli florets
- 1 lb frozen green beans
- 1 lb frozen cauliflower
- 1 lb mini carrots
Instructions
- Shred the leftover beef steak and place all the ingredients in a large kettle on the stove EXCEPT the ketchup and the Worcestershire sauce.
- Place on high heat until simmering and then turn to low and allow to simmer for 1 hour.
- Take off of the heat and stir in the ketchup and Worcestershire sauce. Add more or less ketchup to taste.
Freezing Instructions
- Allow to cool completely in freezer safe containers and place in freezer when cool. Reheat as needed.
