Mint Cookies and Cream Dairy-Free and Gluten-Free Ice Cream Recipe
A couple of days ago I created a poll on Instagram to see which ice cream recipe you all wanted first, and although coffee was popular this mint cookies and cream recipe soared ahead!
As a little tip, did you know that all Oreo cookies are naturally dairy free? The cream is actually made with oil and sugar, so if you are concerned about keeping the recipe dairy free then you can use any oreo cookie.
Otherwise find a gluten free chocolate and cream cookie to keep this recipe gluten and dairy free!

Mint Cookies and Cream Ice Cream Recipe
Equipment
- Ice Cream Maker
Ingredients
- 14 oz can unsweetened coconut milk
- 1 c GF regular oat milk
- 2 eggs
- 3/4 c sugar
- 2 tsp mint extract
- 1 c Oreos, crushed (approx 14 Oreos)
- bag of ice
- rock salt
Instructions
- Mix together the coconut milk, oat milk, 2 eggs, sugar, mint and 1/2 c crushed Oreos.
- Place the other 1/2 c of Oreos in the freezer.
- Pour the ice cream mixture into the metal drum of the ice cream machine.
- Pour ice around the drum approx 1/4 full. Sprinkle rock salt on top. Repeat the ice and the salt until approx 3/4 full (fill to the top if making a double batch).
- Mix in the ice cream machine for approximately 20 minutes to desired texture.
- Pour into a glass bread pan and sprinkle the remaining Oreos on top.
- Freeze.
