This easy lemon bar recipe is one of my very favorites. 

I am a sucker for lemon (and key lime!) recipes.  One of the things I love about these bars is they are tangy and melt in your mouth delicious without being sickeningly sweet. 

I am pretty sure the recipe I have made for years is pretty standard, although maybe without quite as much sugar, but it is a winner every time! 

These are a great make-ahead dessert too because they freeze well and can be kept in the baking dish for later or frozen as individual bars.

Easy Lemon Bar

This lemon bar recipe melts in your mouth and leaves a burst of fresh tangy lemon flavor with every bite.  Enjoy this taste of summer all year long!

Cook Time 35 minutes
Total Time 2 hours

Ingredients
  

Crust

  • 2 c white whole wheat flour
  • 2 sticks butter, softened
  • 1 1/2 c sugar
  • 1/4 tsp salt

Lemon Bar

  • 4 eggs
  • 1/2 c sugar
  • 1/3 c lemon juice (approx 3 lemons)
  • 1 dusting powdered sugar

Instructions
 

  • Prepare crust by mixing all the ingredients together and pressing into a greased glass 9x13 dish.
  • Bake at 350F for 20 mins.
  • Mix the eggs, sugar and lemon juice.
  • Pour into baked crusts and return to the oven for another 15 mins or until edges are just slightly browned.
  • Allow to cool and refrigerate for 1-2 hours prior to serving. Lightly dust the bars with powdered sugar

Freezing Instructions

  • Prepare and bake as directed allowing to cool completely. Seal in freezer safe baking dish or seal individual bars and place in freezer.
