Mix the butter, brown sugar, flour, oats, baking soda and salt and press two thirds of the mixture into the bottom of a greased 9x13 baking dish. Set the remaining oat mixture aside.
Mix the milk, cinnamon, ginger, pumpkin, and eggs in a bowl. Pour over the bottom oat layer.
Top with the remaining oat layer and chocolate chips.
Bake at 350F for 45 mins.
Freezing Instructions
Prepare as directed and allow to cool for 2 hours. Cut into bars and freeze. Thaw before serving.
